Salmon Nicoise Salad

Ingredients:

  • 1 lb Wild Salmon cut into portions.

  • 1 lb Baby Potatoes

  • 1 package Grape Tomatoes

  • 1 lb Green Beans, ends trimmed

  • 3 Eggs

  • 2-3 Garlic cloves, minced

  • 1/4 cup Katamala Olives, sliced

  • Salad Greens

Dressing:

2 tsp Dijon Mustard,

2 Tbsp Extra Virgin Olive Oil,

1 Garlic Clove, minced

Red Wine Vinegar

How To:

  1. Preheat Oven to 400 degree’s

  2. Slice potatoes in half and toss with 2 Tbsp EVOO 2 garlic cloves minces, salt & pepper . Roast for 10 minutes.

  3. Mix ingredients for a dressing.

  4. Soft boil Eggs by placing in a pot of boiling water for 6 minutes, Promptly remove and place eggs in ice water to stop cooking process.

  5. Brush Salmon with dressing mix.

  6. In the pan with potatoes add Salmon, Green Beans & Tomatoes. Drizzle beans and tomatoes with EVOO salt & pepper. Roast for 10 minutes

  7. After 10 minutes is up raise temperature to broil, cook for 2-3 more minutes.

  8. Build your salad - Greens, veggies, halved eggs and top with salmon.
