Salmon Nicoise Salad
Ingredients:
1 lb Wild Salmon cut into portions.
1 lb Baby Potatoes
1 package Grape Tomatoes
1 lb Green Beans, ends trimmed
3 Eggs
2-3 Garlic cloves, minced
1/4 cup Katamala Olives, sliced
Salad Greens
Dressing:
2 tsp Dijon Mustard,
2 Tbsp Extra Virgin Olive Oil,
1 Garlic Clove, minced
Red Wine Vinegar
How To:
Preheat Oven to 400 degree’s
Slice potatoes in half and toss with 2 Tbsp EVOO 2 garlic cloves minces, salt & pepper . Roast for 10 minutes.
Mix ingredients for a dressing.
Soft boil Eggs by placing in a pot of boiling water for 6 minutes, Promptly remove and place eggs in ice water to stop cooking process.
Brush Salmon with dressing mix.
In the pan with potatoes add Salmon, Green Beans & Tomatoes. Drizzle beans and tomatoes with EVOO salt & pepper. Roast for 10 minutes
After 10 minutes is up raise temperature to broil, cook for 2-3 more minutes.
Build your salad - Greens, veggies, halved eggs and top with salmon.
