Ginger-Coconut Cauliflower Rice

INGREDIENTS

  • 1 head cauliflower or 4 cups/package Cauliflower “rice”

  • 1 clove Garlic

  • 1 tsp grated fresh Ginger

  • 1/2 cup Chicken stock or Vegetable broth

  • 1 small Spring onion, or yellow onion, diced

  • 1 can Unsweetened coconut milk (full fat)

  • 6 Scallions, sliced

  • lemon zest from 1 lemon

  • 1/4 cup fresh cilantro

  • 1/4 cup fresh parsley

How to:

  1. If using a head of cauliflower, cute into chunks and pulse in a food processor to make “rice.”

  2. In a large saute pan, heat 1 tbsp coconut oil over medium heat. Add the ginger, garlic and spring onion to pan and saute until fragrant (~30 seconds). Add broth and coconut milk, bring to a simmer fand allow to simmer for 1 minute.

  3. Add cauliflower rice and cook, stiring often until tender, ~ 5 minutes.

  4. Stir in scallion, zest, herbs and coconut milk. Mix until evenly incorporated, salt and pepper to taste.


Cauliflower rice is an excellent grain-free, gluten-free, clean-eating base or side dish. A fantastic spring time recipe to aid digestion, reduce inflammation and speed detoxification.
