Turkey Turmeric Meatballs

Ingredients:

  • 2 lbs Ground Turkey, mine is from Butcher Box

  • 3 cloves Garlic, minced

  • 1 Yellow Pepper, diced

  • 4 Scallion, thinly sliced

  • 1 Green Apple, peeled and chopped

  • 2 Eggs, beaten

  • 1 tsp ground Turmeric

  • 1 tsp dried Thyme

  • 2 tbsp ground Flaxmeal

How to:

  • Preheat oven to 350’.

  • Prepare ingredients (chop and beat).

  • Combine meatball ingredients in a large bowl and mix until uniform batter.

  • Scoop batter into 2 tbsp sized balls.

  • Heat 2 tbsp avocado oil over medium-high heat. Saute and brown meatballs on all sides in a large pa, turning every 2-3 minutes.

  • Once all your balls are browned pop in the oven for 10 minutes to ensure they are cooked though.


To make it a complete meal:

Serve over spaghetti squash, zoodles or gluten-free pasta of your choices and add an additional green veggie (beans, broccoli, kale, chard) . I served mine with roasted green beans.
