Turkey Turmeric Meatballs
Ingredients:
2 lbs Ground Turkey, mine is from Butcher Box
3 cloves Garlic, minced
1 Yellow Pepper, diced
4 Scallion, thinly sliced
1 Green Apple, peeled and chopped
2 Eggs, beaten
1 tsp ground Turmeric
1 tsp dried Thyme
2 tbsp ground Flaxmeal




How to:
Preheat oven to 350’.
Prepare ingredients (chop and beat).
Combine meatball ingredients in a large bowl and mix until uniform batter.
Scoop batter into 2 tbsp sized balls.
Heat 2 tbsp avocado oil over medium-high heat. Saute and brown meatballs on all sides in a large pa, turning every 2-3 minutes.
Once all your balls are browned pop in the oven for 10 minutes to ensure they are cooked though.
To make it a complete meal:
Serve over spaghetti squash, zoodles or gluten-free pasta of your choices and add an additional green veggie (beans, broccoli, kale, chard) . I served mine with roasted green beans.
