Cilantro Lime Stir-Fry with Leftover Meat

Ingredients:

8oz Shiitake Mushrooms, cut into bite size pieces 

1 Medium Zucchini Squash, cut into matchsticks 

2-3 carrots, cut into matchsticks 

1 yellow onion, diced 

1 bulb ginger, minced about 1.5tsp 

2 cloves garlic, minced 

3 cups Cilantro Lime Rice (leftover)

2 cups cut up leftover meat (I used Pork Spare Ribs)

Half bunch Cilantro, chopped

pantry needs: 2 -3 Tbsp Coconut Aminos, 2 Tbsp Sesame Seed Oil, Salt & Pepper as desired

How to:

Prepwork:

  1. Matchstick Carrots & Zucchini

  2. Chop up Shiitake Mushrooms into smaller bits

  3. Mince Garlic & ginger

  4. Chop leftover meal

  5. Chop up cilantro (or do this while the carrots are cooking).

Actionwork:

  1. In a wok or large saute pan,, heat 2 tbsp avocado oil over medium-high heat, 

  2. add ginger & garlic and cool until fragrant ~2 minutes.

  3. Add carrots, cook until bringing to tender, ~ 6 minutes 

  4. Add zucchini, mushrooms, onion.   Cook until tender, ~ 3 mins 

  5. Add leftover Rib meat (or any leftover meat cut into pieces) mix & cook until rice is heated. 

  6. Add 2 tbsp coconut aminos, 2 tbsp sesame seed oil.  Taste and adjust as necessary, maybe another tbsp coconut aminos  

  7. Add 1/4 cup chopped cilantro.  mix and that’s it!
