Dill Pickle Macaroni Salad

Ingredients:

2 cups Random dill pickles

3 Carrots, (cut into match sticks

3-5 Stalks Celery, preferably the insides with leaves.

1/2 Yellow Onion, diced

3 Scallions, thinly sliced

Optional — 3 hard boiled eggs, chopped

Dressing:

1/3 cup dill pickles

1 tbsp dijion mustard

2 Tbsp Nutritional Yeast

1/3 cup EVOO

1/2 tea sea salt

1/2 bunch parsley

How to:

Prepwork:

  1. Chop and dice the pickles, celery, onion, carrots,

  2. Prepare macaroni to package directions for al dente (aka- not fully cooked)

  3. Make the dressing: Using and immersion blender, combine 1/3 cup pickles, 1 tbsp dijon mustard, 1/4 tea sea salt, 2 tbsp nutritional yeast, 1/3 cup EVOO, 1/2 bunch parsley.

Actionwork:

Gather all ingredients into a large bowl. Mix, chill & serve!
