Salmon with Zucchini Fritters toped with Dill Sauce
Dinner Ingredients:
1 lb Sockeye Salmon (Grilled)
1 Medium Zucchini, shredded
2 Scallions, thinly sliced, keeping some aside for garnish
3 Tbsp Coconut Flour
2 Garlic Cloves, minced
1 tbsp Nutritional Yeast
1/2 tsp Sea salt
1 egg, beaten
Dressing ingredients:
1/4 bunch fresh Dill
1 tbsp Avocado Oil (can sub EVOO)
1 tsp Nutritional Yeast
Juice from 1 lemon










How To Make Zucchini Fritters:
Shred Zucchini into a large bowl (no need to drain). Add Coconut Flour, Scallions, Garlic, Nutritional Yeast, sea salt and stir to combine. Then add 1 beaten egg to form batter. In a large saute pan heat 2 tbsp Avocado oil over medium-high heat . Scoop 2tbsp of batter onto pan in a round pancake like shape. Allow batter to brown in pan for 3 minutes then flip and repeat.
How to Make Dressing:
Combine Dill, Oil, Nutritional Yeast and lemon juice in a small food processor, pulse to combine. Pinch of sea salt to finish.
