Gut Jacked Cole Slaw

Ingredients:

1/2 head red cabbage (soaked overnight in 1/2 cup ACV)
1 cup shredded carrots
1 cup sliced snap peas or snow peas
1/2 cup sliced (or shredded) radishes

For the dressing:
1 medium zucchini shredded
1 cup Avocado Mayo (I use this one)
1 package vegan Cream Cheese (I use this one)
3 celery stalks/leaves (the small center ones) finely chopped
1 tsp sea salt
1 tsp fresh cracked black pepper

How to:

  1. Drain cabbage from overnight soak

  2. Combine ingredients for dressing in a large bowl.

  3. Add veggies to dressing and stir until fully combined.

We serves this with grilled chicken and a side of iceberg salad and lime basmati rice.
