Green Goddess Ground Meat Stir-Fry
I always seem to have packages of ground beef at the ready and never enough quality recipes to use them with. That is what inspired this Stir-Fry using Ground Beef. And no green goddess dress is involved, just lots of green veggie goodness.
Ingredients:
1 pound Grass Fed Ground Beef (also works for ground turkey, chicken or pork)
3 Garlic cloves minced
1 Tbsp Avocado or sesame oil
1 med Zucchini, sliced into strips
1/2 to 1 cup Green Beans or sugar snap peas
5-6 Scallions, cut into 2 inch pieces
1/2 to 1 cup Broccoli, cut into pieces
1/2 bunch Cilantro, chopped
1 lime, juiced
1/4-1/2 cup packed brown sugar
1/2 cup reduced-sodium Tamari soy sauce (or Coconut Aminos)
1 Tablespoon sesame oil
optional 1/4 teaspoon crushed red pepper flakes
1/2 tsp sea salt
1/2 tsp pepper
Garnish: Avocado slices, EVOO, chopped Green Onions and/or Sesame Seeds
How to:
In a large skillet or wok heat avocado oil over med-high heat, add ground beef and garlic and cook, breaking the beef into crumbles until no longer pink (about 4-5 minutes). Remove the ground beef and set aside on a plate.
Keeping grease in the pan, add broccoli, beans (snap peas), zucchini and scallions. Saute 3-4 minutes or until tender. Add the ground back to the skillet.
In a small bowl whisk brown sugar, soy sauce, sesame oil, lime juice, and red pepper flakes if using. Pour over the ground beef and let simmer for another minute or two.
Add cilantro. Taste and add salt & pepper to your liking.
Serve over basmati or jasmine rice. Garnish with avocado slices, green onions and/or sesame seeds.
notes: leftovers were awesome!! I added a drizzle of tahini for some added fat and it stuffed me!
