Carrot Cake Cookies (Vanilla Protein)
Carrot Cake has got to be my all time favorite dessert so OF COURSE I needed to create my own clean and protein packed alternative.










Clean Carrot Cake Cookies
1.Preheat oven to 375’
2. In a medium to large bowl combine;
2 cups shredded Carrots (2 large)
1 cup crushed or puree’d pineapple
1 cup unsweetened shredded Coconut
> mix together
3. In a glass measuring cup, combine;
3/4 cup unsweetened almond, flax, nut or oat milk
2 scoops vanilla protein powder
1 scoop protein boost (optional)
1 scoop fiber boost
> mix together to form “mashed banana” like consistency
4. Combine Carrot mix and Protein Mix and then add;
4 tbsp melted coconut oil
1/2 cup cashew butter
2 tbsp flaxseed meal
1 tsp cinnamon
1/8 tsp mace
1/8 tsp ground ginger
1/8 tsp nutmeg
> Mix together
5. Combine Carrot mix (dry) and Protein Mix (wet) until well combined. (optional to add 1 cup chopped walnuts).
6. Scoop batter onto silpat (or parchment paper) lined bake sheet.
7. Flatten mounts with the back of a coconut oil dipped spatula.
8. Bake for 20-25 mins until edges begin to brown.
SOOO Yummy! and nutrient dense too
