Pumpkin Soup Chili
INGREDIENTS:
1 white or yellow onion (or sub shallot or red onion)
garlic
minced ginger
1 medium jalapeño, minced (seeds and stem removed)
1 small sweet potato
1 14-oz can diced fire roasted tomatoes (with or w/o green chilies)
1 14-oz can coconut milk / could use almond it just wont be a rich
1 cup pumpkin pureé (fresh or canned)
1 15-ounce can black beans, drained & rinsed
1 can kidney beans, drained & rinsed
2 cups chopped greens (kale, spinach, collard greens, chard)
Optional adds: Ground Beef or Shredded Chicken
Pantry needs: Coconut oil, Cumin, Chili powder, Coriander, Vegetable or Chicken Broth

How to:
Prepwork:
Medium Dice yellow onion
Chop jalapeno and celery
Mince 2-3 cloves of garlic and 1 tsp ginger (or use pre-minced like me)
If using organic sweet potatoes then leave the skin on and chop into 1/2 inch pieces
Gather remaining pantry needs & Spices 1 tsp cumin, 1 tsp chili pepper, 1/4 tsp coriander,
Actionwork:
Melt 1.5 Tbsp in large stock pot over medium-high heat. Saute onions until soft, about 2 minutes.
Add jalapeños, celery, garlic, and minced ginger cooking until fragrant, another 2 mins.
Add sweet potatoes, cumin, chili pepper, coriander, 1 can diced tomatoes, fill the can with broth and add it also. Bring this to a low boil and allow it to simmer for about 10 minutes until the potatoes are tender.
Add 1 can coconut milk, the pumpkin purée, drained & rinsed black beans and simmer for another 5-10 minutes.
*** At this point you could be done. But I didn’t stop so maybe you want to turn this soup into Chili too.
Brown up ground meat (beef, turkey, chicken, pork) in a large saute pan breaking it up as you do.
Add the ground meat and 1 can drained and rinsed red kidney beans. Let it cook to incorporate the flavors and heat the bean thought, about 5 minutes.
Add a handful of greens (baby spinach or kale), allow time for greens to whilt ~5 minutes.
Optional: Chop up fresh cilantro for a topping.
That’s it, your done.
