Clean Pumpkin Bread
INGREDIENTS
1 1/2 cups all-purpose flour (I love namaste)
3 Scoops Protein Powder (I used Pumpkin Spice but Vanilla works too)
1 teaspoon baking soda
1/4 teaspoon baking powder
1 teaspoon sea salt
1 teaspoon nutmeg
2 teaspoons cinnamon
1/2 teaspoon cloves
1 teaspoon vanilla
2 pasture raised eggs
1 cup fresh pumpkin puree
1/2 cup Non-dairy milk (I used homemade almond/macadamia nut )
3/4 cup melted coconut oil
How to:
Preheat oven to 350°F.
Combine Dry ingredients (flour, protein powder, fiber boost, baking soda, baking powder, salt, nutmeg, cinnamon, and cloves.
Combine wet ingredients (eggs, oil, milk, vanilla, and pumpkin puree).
Pour wet ingredients into dry ingredients until just combine.
Oil insides of glass loaf pan or line a bread pan with parchment paper, then pour the batter into the pan.
Bake for 60 minutes, turning it 180’ half way during cooking.
Allow to rest for at least 20 minutes before cutting.
