Strawberry Zucchini Muffins

This most recent full moon was dubbed the Strawberry Full Moon. Not so much for color but because strawberries are now ripe and in their prime.  Here is my devotion to this wonderfully sweet and sacred fruit.

Ingredients:

Dry: 

2 cups (GF) all purpose flour  ( I used this )

1 1/2 teaspoon baking powder 

1 teaspoon baking soda 

1 teaspoon cinnamon 

2 scoops or 1/2 cup Vanilla FeelFit Protein  (I use this)

1/4 cup GutHealth Prebiotic Fiber  (I use this)

Wet:

1 medium zucchini = 1 1/2 cup grated

1 teaspoon vanilla 

1/4 cup melted coconut oil  (i use this)

2 flax eggs or 2 eggs 

    >  (2 tbsp flaxseed meal  + 5 tbsp water) 

3/4 cup Unsweetened non-dairy milk (I used cashew but this would work well too)

1 cup strawberries chopped 

How to:

  1. Preheat oven to 375’ & prepare muffin tin with liners.

  2. Prepare flax egg if using.

  3. Combine all dry ingredients in a large bowl and set aside.

  4. Grate zucchini in medium bowl, add vanilla, melted coconut oil, flax egg & non-dairy milk. Stir to combine.

  5. Combine wet and dry ingredients.

  6. Stir in chopped strawberries.

  7. Scoop 2 tbsp batter into each muffin tin until 3/4 full.

  8. Bake for 20-25 minutes until edges brown.

  9. Repeat with remaining batter cuz you’re making like 21 muffins my friend. Plenty for sharing or freezing for another day 😉


Why was this recipe created:

During the passage of the Full Moon on June 21st I had joined a global meditation lead by Moon Omens that was so lovely and shared a couple lessons that I enjoyed and will carry with me.

The Strawberry, unlike most fruits who’s seeds are grown within, strawberry seeds are grown on the outside. They are imbedded into the delicate skin, allowing for all creatures to see them. 

We can take wisdom from this special fruit for human seeds are our traits. It’s is the personalities within that make us, us. Our stories, our past, our experience they are all seeds of thought that shape and mold us into the beings we are. If we are bruised from heart-ship, if we are strong from physical accomplishments . 

We can take wisdom from this fruit and wear our seeds like badges of honor. Allowing for true authenticity to emerge.  This touched my heart so because I have hid my seeds for many years. From others but also from myself.   When we can embrace this strawberry, this delicate fruit with maybe some bruising and taste it…the fruit inside is sweet, so sweet indeed.  Where we embody the essence and allow our seeds to show, we too are then made rich with sweetness (and love). 

So in honor of the sweet strawberry, I give you my nourishing and just sweet enough devotional muffin.
