Breakfast Hash

Ingredients:

1/2 lb Brussel Sprouts, shredded

1 Sweet Potato, diced into small (1/2 inch) pieces

1 Green Apple, diced into (tiny 1/4 inch) pieces

1/2 Red Onion, Diced

1 lb Breakfast Sausage

How to:

PREP-WORK-

  • Chop Sweet Potato's & Apples into 1/4 inch pieces.

  • Dice Red Onion

  • Shred Brussel Sprouts (I used something like this)

Action-Work:

  1. Heat Cast Iron Skillet over medium-high.

  2. Add Breakfast Sausage and cook until browned, breaking it up into smaller pieces with a meat masher or a wooden spoon.

  3. Remove sausage and keep the leavings in the pan.

  4. Add red onion and sweet potato to hot pan, stir and sauté for 4 minutes until potatoes begin to tender.

  5. Add 1 tbsp fat/grease (bacon fat or coconut oil) green apple and Brussels, stir and sauté for 4 minutes until tender. Add fresh herbs and seasoning.

  6. Return sausage to the pan. Stir and ✅
