Spring Pasta Salad
Ingredients:
1 lb Sweet Italian Sausage, Cooked and sliced
! box Gluten Free Noodles (I used Jovial Cassava Fuccini), cooked al dente & Cooled
1 Package Sugar Snap Peas, sliced into 1/2 inch pieces
1 package Cherry Tomatoes, quartered (can also use Grape Tomatoes),
1 head Broccoli, chopped into bite sized pieces
1/2 Sweer onion, diced
Dressing:
1/2 cup Extra Virgin Olive Oil
2 tbsp Balsamic Vinegar
2 Tbsp Red Wine Vinegar
1 tsp dried Oregano,
1 tsp Dried Thyme
1/2 tsp sea salt & Black Pepper
How to:
Combine all ingredients into a large bowl and mix to combine. Can enjoy now (warm) or refrigerate to allow flavors to marinate until serving.
Best used for lunch or a pot luck meal.
