Insta Lamb Loin Goodness with Gravy

Ingredients:

1 Lamb Loin Roast

1 Yellow Onion, sliced

3 cloves Garlic, minced

2 cup Beef Broth, I prefer bone broth

6 Carrots, chopped

3 Stalks Celery (including greens), Chopped

1 Zucchini, in half-moons

1 bunch parsley

16 oz Riced Cauliflower

3 Tbsp Arrowroot Starch

Cooking Essentials: High Heat Stable Oil (Avocado or Coconut Oil), dried Sage, Thyme, Ginger, Marjoram, salt & pepper,

How To:

  1. Season all sides of Tenderloin with Salt & pepper.

  2. Prepare InstaPot (or pan) to Saute Medium-High option. Melt 1.5 tbsp heat stable oil and sear each side of tenderloin until browned on all sides.

  3. Prepare seasoning and chop onions.

  4. Add seasoning, broth and onions to the pot with seared loin. Top with onions. Set to cook high pressure for 50 minutes.

  5. Chop remaining veggie ingredients.

  6. Release pressure after the timer goes off and enjoy that sweet aroma.

  7. Add veggies and parsley to pot and set to cook for 9 minutes.

  8. You’ll want to quick release the pressure this time and remove the veggies before they get too soft. Remove meat and veggies from pot and set aside.

  9. Start cooking up the cauliflower rice. In a large saute pan melt 1.5 tbsp oil over medium heat. Add “rice” to pan and cook until done, about 5 minutes string often.

  10. Turn Intapot back on high saute (we’re going to reduce and thicken the cooking juice to make gravy). While whisking, add 3 tbsp arrowroot starch. It will soon begin to thicken. Add salt & fresh cracked black pepper to taste. Remove when its at your desired consistency.

    Dinner is now done.
